You can buy pre-cooked organic wild rice in pouches at the supermarket - I heat it up in the microwave to soften it a bit then add anything salad-y I have in the house - usually rocket, tomato, cucumber, fetta, avocado, red onion, maybe some tuna ... add some olive oil and balsamic and there you have it!
